Dr. ONO Yoshiko and Dr. KISHI Yasuyuki’s research on cross-cultural preferences for sake was published in “Journal of Sakeology”

ONO Yoshiko, Ph.D., Head of Promotion Office, Sakeology Center, and KISHI Yasuyuki, Ph.D., Director of Sakeology Center, conducted a comparative survey in Japan, France, and the United States to analyze consumer preferences for sake in support of its international expansion. The results revealed that although French and American participants are deeply rooted in wine culture, they expressed significant interest in and favorable evaluations of sake. In particular, sake with fruity and fresh aromas was preferred. Furthermore, this research indicates the importance of a multifaceted promotional strategy for overseas markets that not only emphasizes flavor characteristics but also conveys the cultural value of sake.
The research result was published in “Journal of Sakeology.”
