Dr. TSENG Kuo-Che and Dr. KISHI Yasuyuki’s research on the 100-year history of Taiwan’s sake industry was published in “Global Food History”

TSENG Kuo-Che, Ph.D., a cooperating faculty member of Sakeology Center, and KISHI Yasuyuki, Ph.D., Director of Sakeology Center, examined the approximately 100-year history and its development of Taiwan’s sake industry. The study traces the introduction of brewing technologies and the establishment of the alcohol monopoly under Japanese colonial rule, the postwar inheritance of the monopoly system and decline of sake production, the revival of sake brewing amid market liberalization from the 1990s, and the industry’s transformation following Taiwan’s accession to the WTO. The findings  highlight three interrelated dimensions that have shaped Taiwan’s sake industry: technology transfer, institutional inheritance, and postcolonial reinterpretation.
The research result was published in “Global Food History.”
