Dr. MIYAMOTO Takuji and Dr. NISHIDA Ikuhisa’s research on sake rice was published in “Journal of Cereal Science”
MIYAMOTO Takuji, Ph.D. (Specially Appointed Assistant Professor, Sakeology Center; Research area: Plant nutrition) and NISHIDA Ikuhisa, Ph.D. (Specially Appointed Assistant Professor, Sakeology Center; Research area: Applied microbiology) conducted interdisciplinary research (PI: MIYAMOTO Takuji) with OHTAKE Norikuni, Ph.D. (Professor of Faculty of Agriculture; Cooperate Faculty Member of Sakeology Center) and HIRATA Dai, Ph.D. (Professor of Faculty of Agriculture; Vice Director of Sakeology Center), and demonstrated that reducing the amount of nitrogen fertilizer applied to sake rice plants at the panicle formation stage lowers the amino acid concentration in sake brewed from the grains through lowering the protein content of rice grains and increasing sake production.
The research result was published in “Journal of Cereal Science.”
