The 2nd Sakeology Seminar in FY2023, “Protecting food safety: Food preparation and processing, and control of Staphylococcus aureus,” was held

On July 6, 2023, the 2nd Sakeology Seminar in FY2023, “Protecting food safety: Food preparation and processing, and control of Staphylococcus aureus,” was held. In the seminar, TSUTSUURA Satomi, Ph.D., Associate Professor of the Faculty of Agriculture, Cooperating Faculty Member of Sakeology Center, gave a lecture on her research.

Focusing on Staphylococcus aureus and its toxins, Dr. Tsutsuura introduced her latest research on the impacts of pH, seasonings, etc. on bacterial growth and toxin production, as well as the scientific regulation and control of these factors combined with high-pressure processing technology.
