On May 13, 2021, the 1st Sakeology Seminar in FY2021, “Sakeology explored through the research of amino acid transporters and cell death,” was held. In the seminar, SATO Mami, Ph.D., Specially Appointed Assistant Professor, Sakeology Center, gave a lecture on her research.
Dr. SATO Mami introduced the role of amino acid transporters (proteins that deliver amino acids into cells) as well as a new form of cell death, ferroptosis, which was proposed in the 2000s, and explained her upcoming research themes such as the effects of ingredients contained in sake and sake lees on the physiological functions of cells.
