The 1st Sakeology Seminar in AY2024, “Health and Sakeology revealed by collagen research,” was held

On July 22, 2024, the 1st Sakeology Seminar in AY2024, “Health and Sakeology revealed by collagen research,” was held. In the seminar, KAKU Masaru, Ph.D., Associate Professor of Graduate School of Medical and Dental Sciences (Faculty of Dentistry), Cooperating Faculty Member of Sakeology Center, gave a lecture on his research.

Dr. Kaku introduced his research on the essential roles of the extracellular matrix (ECM) in periodontal tissue, including collagen, a major protein in the human body; comprehensive analysis of the ECM using mass spectrometer (ECM proteomics); and the promoting effect of sake/sake lees extracts on collagen production.

 

The 2nd Sakeology Seminar in AY2024 is scheduled for September 2024.
*Sakeology Seminar is open to the faculty members and staff of Niigata University.
