The joint research by HATA Yuki, Ph.D., Specially Appointed Assistant Professor, Sakeology Center; KISHI Yasuyuki, Ph.D., Vice Director of Sakeology Center; and Mr. WATANABE Hideo, Sakeology Center entitled “Elucidation of the significance of sake through sake brewing in local communities” (Principal researcher: Dr. HATA Yuki) , was adopted as the 2021 research grant from Urakami Foundation for Food and Food Culture Promotion*.

It was established in April 1986 with the primary objective to promote research on food production, processing, and safety, and education of food culture and thereby contribute to the development of the food industry and food culture in the country and the improvement and security of people’s diet.
