The 2nd Sakeology Seminar in FY2025, “Research on Substances, Enzymes, and Aromas Produced by Microorganisms: Contributing to Sakeology,” was held
On July 3, 2025, the 2nd Sakeology Seminar in FY2025, “Research on Substances, Enzymes, and Aromas Produced by Microorganisms: Contributing to Sakeology,” was held. SATO Tsutomu, Ph.D., Professor of the Faculty of Agriculture, Faculty Member of the Sakeology Center, gave a lecture on his research.
Dr. Sato introduced his research focusing on terpenoids, which are particularly diverse among natural products, with over 100,000 compounds known to exist. Terpenoids are a diverse group of compounds found in animals, plants, microorganisms, yeast, and koji mold.
In this seminar, Dr. Sato presented his research on the development of an artificial enzymatic synthesis and its industrial applications for ambrein, the main component of the prestigious animal-derived fragrance “ambergris,” focusing on terpene cyclases using biotechnology.
The 3rd Sakeology Seminar in FY2025 is scheduled for September 2025.
