Sakeology Lecture for SBANA Brewers from the US was offered

On July 6, 2024, Sakeology Lecture was offered to the brewers who are members of Sake Brewers Association of North America (SBANA) (*) in the US at Sakeology Center, Niigata University.

This lecture was part of the Advanced Sake Brewers Program, a collaboration between Obata Shuzo Co., Ltd. and SBANA.

The lecture began with an overview of Sakeology by HIRATA Dai, Ph.D., Vice Director of Sakeology Center, followed by a lecture on microorganisms involved in sake brewing by NISHIDA Ikuhisa, Ph.D., Specially Appointed Assistant Professor of the Center.

Next, Dr. Hirata gave a lecture on the structure and factors that cause 14 typical aroma components during sake brewing, and participants actually experienced the smells of these components.

Lastly, the participants toured the facilities, including the sake test-brewing laboratory.
