About Sakeology Center, Niigata University

Niigata Prefecture, Niigata Sake Brewers Association, and Niigata University have entered into a tripartite agreement with the objectives of establishing Sakeology as an academic discipline covering a broad variety of cultural and scientific fields related to sake, and contributing to the establishment and development of an international hub of Sakeology. To achieve the goals of this agreement, Sakeology Center, Niigata University was established.

In FY2025, Niigata University has introduced a new

In FY2025, Niigata University has introduced a new certificate program, “Sakeology Professional Program (Sakeology-P1)”.
Sakeology is the world’s first academic discipline, featuring extensive learning with an interdisciplinary focus specifically on sake, which is rooted in Japanese culture and traditions. In recent years, global interest in sake has been on the rise. An increasing number of people are seeking to acquire knowledge and skills pertaining to Sakeology, particularly in sake brewing, aiming to become sake brewing practitioners or start their own sake brewery ventures overseas. In response to such educational needs, Niigata University has introduced a new certificate program, “Sakeology Professional Program (Sakeology-P1),” designed to train professionals involved in sake brewing as Sakeology evangelists.
We are now accepting applications for FY2025 as follows.
【Number of Applicants (FY2025)】
　Approx. 4 students
【Eligibility/Qualifications】
　Applicants must meet the admission criteria of Niigata University as stipulated in Article 41 of the Niigata University Academic Regulations and Articles 17 through 19 of the Niigata University Graduate School Academic Regulations. Preference will be given to sake brewing practitioners, those currently working in brewing organizations, or who plan to start a business related to the production of sake overseas. 　Required to complete the necessary courses, totalling 60 hours
【Tuition fee for the certificate program】

令和7年度、新潟大学は新たな履修証

令和7年度、新潟大学は新たな履修証明プログラム「日本酒学プロフェッショナル人材養成プログラム（Sakeology-P1）」を開設します。
日本酒学（Sakeology）は、日本文化や伝統に根ざした日本酒に対象を絞り、関連する広範な学問領域を網羅する「対象限定・領域横断型」の世界初の学問領域です。近年、世界的に日本酒への関心が高まり、日本酒学、とりわけ、日本酒醸造に関する知識及び技術の修得や、日本酒醸造に関連する実務者を目指す方、また海外においてSAKE Breweryの起業を希望する方が増えています。そこで、新潟大学では、そのような教育的ニーズに対応するため、日本酒学の伝道者として、日本酒醸造に携わるプロフェショナル人材を養成する、新たな履修証明プログラム「日本酒学プロフェッショナル人材養成プログラム（Sakeology-P1）」を開設します。
つきましては、令和7年度生を次のとおり募集します。
【募集人員（令和7年度生】
　4名程度
【対象者・履修資格】
　新潟大学学則第41条及び新潟大学大学院学則第17条から第19条までに規定する本学への入学資格を有する者。なお、日本酒（海外におけるSAKE）醸造の実務者、醸造機関ですでに働いている方、あるいは日本酒醸造に関する起業を具体的に計画している方などを優先する。

　2025年8月21日（木）～2025年8月31日（日）
【修了要件】
　授業科目の中から必修科目（総時間数60時間）を履修すること
【履修証明プログラム受講料】
　66,000円（実習経費等別途約20万円要）

On March 28, 2025, the delegation from Vinh Long P

On March 28, 2025, the delegation from Vinh Long Province, Vietnam, including Lu Quang Ngoi, the chairman of the People’s Committee, and about 30 others, with which Niigata Prefecture has concluded an MOU, visited Niigata University and toured the Sakeology Center as part of their visit.

First, SUEYOSHI Kuni, Ph.D., Director of Sakeology Center, explained to the delegation the background of the Center’s establishment and its activities related to Sakeology in the Seminar Room.

Then, while receiving an explanation from NISHIDA Ikuhisa, Ph.D., Associate Professor, Sakeology Center, they observed the sake mash moromi being experimented with various sake yeasts and compared the aromas in the sake test-brewing laboratory. They also saw the various equipment for sake analysis in the sake and food taste analysis laboratory.

Afterwards, they tasted “Rikka no Mori 2024,” a sake that the graduate students of the Graduate School Sakeology Program worked on sake brewing, and “Shinsetsu Monogatari,” a sake made from sake rice grown in the fields of the Field Center for Sustainable Agriculture and Forestry, Faculty of Agriculture.

They also viewed the exhibits of sake cups, vessels and bottles in the exhibition space, as well as the display of rice ears of “Koshitanrei,” sake-brewing rice developed in Niigata Prefecture.

The delegation was very interested in the activities of the Sakeology Center and commented that the sake they tasted was very tasty.

Their visit to Niigata University was covered by the Broadcasting System of Niigata Inc. (BSN).

2025年3月28日（金）、新潟県とMOUを締結しているベトナムビンロン省のレ・クアン・ゴイ人民委員会委員長ら約30名の訪問団が新潟大学を訪問され、その一環で日本酒学センターを見学されました。
初めに、セミナー室で末吉邦センター長より日本酒学センター設立の経緯や日本酒学に係る取組について説明を受けられました。
続いて、西田郁久准教授の説明を受けながら、試験醸造室では様々な清酒酵母を用いた実験中のもろみを観察され、その香りを比較されました。そして、日本酒と食品の美味しさ解析室では日本酒の分析に係る様々な機器を見学されました。
その後、大学院日本酒学プログラムの大学院生が酒造りに携わった日本酒「六花の杜（りっかのもり）2024」と、農学部附属フィールド科学教育研究センターの田圃で栽培した酒米を使った日本酒「新雪物語」を試飲されました。
また、展示スペースの酒器や酒瓶の展示の他、新潟県で開発された酒造好適米「越淡麗」の稲穂の展示もご覧になりました。
訪問団の皆様は、日本酒学センターの取組に大変関心を持たれ、試飲した日本酒が大変美味かったというご感想もいただきました。

Five overseas wine industry specialists invited by

Five overseas wine industry specialists invited by the Japan Sake and Shochu Makers Association (*) visited the Sakeology Center on January 29, 2025.
The five invitees were first briefed by KISHI Yasuyuki, Ph.D., Vice Director of the Sakeology Center, on the background of the Center’s establishment, its activities related to Sakeology, and sake, followed by the tour of the exhibition space, laboratories, and other facilities led by HIRATA Dai, Ph.D., Vice Director of the Center.
The invitees also participated in sensory training to recognize sake’s distinctive ginjo aroma and off-flavors, using aroma samples, and furthermore tasted sakes brewed with the same raw materials and fermentation conditions, but with different yeast strains only.
In the end, the invitees discussed the sake they tasted and food pairings with sake from the unique perspectives of experts in the wine industry.
The purpose of this invitation project of the Japan Sake and Shochu Makers Association is to provide professionals at the forefront of the wine industry with specialized knowledge of sake, not only through theoretical learning but also by visiting breweries to deepen their understanding.
The invitees included Sören Polonius, Co-Director of the Exam and Education Committee of the Association de la Sommellerie Internationale (ASI), Tiago Paula, President of the Portuguese Sommelier Association, Vincenzo Arnese, who has been awarded Best Sommelier at the GQ Food & Drink Awards in the UK and represented the UK in the international sommelier championship in 2024, Almudena Alberca, the first female Master of Wine in Spain, and Alicia Ahuactzi Martinez, the winner of the 2024 Mexico Sake Academy.
During this project, the invitees also visited the rice polishing facility and rice fields.
Tiago Paula remarked about the Center, “The academic and scientific approach stood out, providing deep insights into the factors influencing sake quality. Systematic research like this is essential for increasing the international recognition of sake and for professionals seeking more specialized knowledge.”

2025年1月29日（水）、日本酒造組合中央会（*）が招聘した海外のワイン業界のスペシャリスト5名が日本酒学センターを訪問されました。
５名はまず初めに、岸保行副センター長による日本酒学センターの設立の経緯や日本酒学に係る取組、日本酒についての説明を受けられ、その後、平田大副センター長による展示スペースや実験室等の施設見学ツアーに参加されました。
また、香りのサンプルを用いて、吟醸香などの日本酒特有の香りやオフフレーバーなどを体験、さらに、原料や発酵条件は同じで酵母だけを変えて発酵させた日本酒の飲み比べをされました。最後には、試飲した日本酒やフードペアリングについて、ワイン業界のエキスパートならではの視点で、様々なディスカッションが交わされました。
日本酒造組合中央会の招聘事業は、ワイン業界の第一線で活躍するプロフェッショナルに対し、日本酒の専門知識を単なる座学にとどまらず、実際に酒蔵を訪れることで深めてもらうことを目的に実施しています。
今回の招聘者は、国際ソムリエ協会の試験・教育委員会の共同ディレクターであるSören Polonius氏、ポルトガルソムリエ協会会長のTiago Paula氏、イギリスのGQフード＆ドリンク・アワードでBest Sommelierの経歴を持ち、2024年にはイギリス代表として国際的なソムリエ選手権にも出場したVincenzo Arnese氏、スペインで女性初のマスター・オブ・ワインの資格を取得したAlmudena Alberca氏、そして、2024年度メキシコサケアカデミー優勝者のAlicia Ahuactzi Martinezの5名です。
今回の訪問では日本酒学センターの他、国内の精米施設や、田んぼ等を訪問されました。
Tiago氏より、日本酒学センターについて、「学術的・科学的アプローチが際立ち、日本酒の品質に影響を与える要因に対する深い洞察を得ることができた。このような体系的な研究は、日本酒の国際的な認知度の向上や、より専門的な知識を求めるプロフェッショナルにとって不可欠である。」とお話をいただきました。

2025年3月3日、日本酒学センターの宍戸邦久教授（経済科学部）による令和6年度第5回日本酒学セミナー「乾杯条例とは何か？」を開催しました。
2013年、地方公共団体が制定する法として、全国で初めて議員提案により京都の乾杯条例（京都市清酒の普及の促進に関する条例）が制定され、これを筆頭に、2024年11月時点で「乾杯」という言葉を使用した条例は全国に194条例あるとご説明がありました。
「乾杯条例」は、全国各地で地元で生産された酒などによる乾杯を奨励するものですが、重要なのは、条例の役割・意義を理解した上で、条例として制定することの理由が存在するか、制定された条例の実効性が確保され正しく政策評価されているかを見極めることであるとお話いただきました。
令和7年度第1回日本酒学セミナーは2025年5月を予定しています。

On March 3, 2025, the 5th Sakeology Seminar in FY2024, “What is Toast Ordinance?” was held. In the seminar, SHISHIDO Kunihisa, Professor of the Faculty of Economic Sciences, Faculty Member of the Sakeology Center, gave a lecture on his research.
Prof. Shishido explained that Kyoto’s Toast Ordinance (Kyoto City ordinance on the promotion of sake) was enacted in 2013 as the first law passed by a local government in Japan by a member of the Diet, and that there are 194 ordinances using the word “toast” throughout Japan as of November 2024, led by this one.
“Toast Ordinance” is an ordinance that promotes toasting with locally produced alcoholic beverages throughout Japan. The important thing, he said, is to understand the role and significance of an ordinance and then determine whether it is necessary to stipulate the toast in an ordinance and whether the effectiveness assurance and policy evaluation are in place.
The 1st Sakeology Seminar in FY2025 is scheduled for May 2025.

2025年2月17日、日本酒学センター協力

2025年2月17日、日本酒学センター協力教員の岡本圭一郎准教授（歯学部）による令和6年度第4回日本酒学セミナー「米発酵エキスと健康：歯学部発の研究内容を紹介します」を開催しました。
新潟県の地域産業である米発酵食品（日本酒、酒粕、米麹）とご自身のこれまでの研究を繋ぎ、本研究に至る経緯や、研究結果についてご紹介いただきました。
ストレスを誘発した実験動物に日本酒、酒粕、米麹を投与するとストレスによる不安や痛みが軽減したこと、また、歯の露髄に酒粕を充填すると硬組織の増生が見られたことから、米発酵エキスは心理ストレスを軽減したり歯の健康に関与する可能性があることをご紹介いただきました。

On February 17, 2025, the 4th Sakeology Seminar in FY2024, “Rice-Fermented Foods and Health: Research from the Faculty of Dentistry,” was held. In the seminar, OKAMOTO Keiichiro, Ph.D., Associate Professor of the Faculty of Dentistry, Cooperating Faculty Member of the Sakeology Center, gave a lecture on his research.
Dr. Okamoto introduced the background to his research and the findings, connecting the rice-fermented foods (sake, sake lees, and rice koji), a regional industry of Niigata Prefecture, and his research to date.
He showed that the administration of sake, sake lees, and rice koji reduced stress-induced anxiety- and pain-like behaviors, and the filling at the region of pulp exposures with sake lees increased the area of the dentin-like tissues. These results indicate the potential of rice-fermented foods to decrease conditions of psychological stress and to affect the tooth pulp function.
