What is Sakeology?

About Sakeology Center, Niigata University

Niigata Prefecture, Niigata Sake Brewers Association, and Niigata University have entered into a tripartite agreement with the objectives of establishing Sakeology as an academic discipline covering a broad variety of cultural and scientific fields related to sake, and contributing to the establishment and development of an international hub of Sakeology. To achieve the goals of this agreement, Sakeology Center, Niigata University was established.

【プログラムを公開しました！】
11月1日（土）13時30分より、ホテルイタリア軒にて、新潟大学、ホテルイタリア軒、新潟県、新潟県酒造組合主催の第8回日本酒学シンポジウムをハイブリッド形式（現地およびオンライン）で開催します。
今回のテーマは、「『日本酒学』の現在地と未来：学際的アプローチで拓く新時代」です。日本国内の大学で『日本酒学』を講義として展開している教育機関や、関連企業の皆様をお招きし、現状の取り組みについてご紹介いただきます。さらに、学際的な視点から日本酒および日本酒学の将来像について、パネルディスカッション形式で議論を深めます。特別講演では、内閣参事官・佐久間寛道氏をお迎えし、日本酒の海外展開を含めた今後の市場拡大の展望についてご講演いただきます。
また、第2部では、現地参加者限定の試飲会「味わう日本酒学」― 飲んで、語って、学ぶひととき ―を開催します。新潟、兵庫（灘）、山形、広島、北海道など、各地域の日本酒を試飲いただけるほか、新潟市内の酒蔵「今代司酒造株式会社」によるブース出展も予定してします。新潟市自慢の食材を使用したホテルイタリア軒のお料理とともにお楽しみください。
各大学の特色ある講義内容に触れながら、各地の自慢の日本酒を味わい、日本酒の未来について語り合いましょう。皆様のご参加をお待ちしております。

The graduate students worked on sake brewing in the laboratory in the Sakeology Basic Practice, a part of the curriculum of the master’s program in the Graduate School Sakeology Program for FY2025.
This year, eight students (four from the Graduate School of Modern Society and Culture and four from the Graduate School of Science and Technology) conducted sake brewing.
They brewed their own sake using yeast cultured themselves while monitoring fermentation for 20 days, and conducted various experiments related to sake brewing such as analyzing rice grains and measuring enzyme activity of rice koji.
At the end of the practice, they conducted a sensory evaluation of sake. After learning the method of sensory evaluation and the characteristic aroma of sake using samples of the aroma components contained in sake, the students evaluated three types of sake, including one sake they brewed themselves and two control sake, and compared the results with the analysis values.

令和7年度大学院日本酒学プログラム博士前期課程のカリキュラムの一つ「基礎日本酒学実習」で、学生たちが実験室で酒造りに取り組みました。
本年度は現代社会文化研究科および自然科学研究科から各4名、計8名の学生が酒造りを行いました。
学生自らが培養した酵母を用いて各自仕込みをしたのち、20日間の発酵管理を行うほか、原料米の分析や米麹の酵素活性の測定など、酒造りに係わる様々な実験を行いました。
実習の最後には、官能評価の手法とともに、日本酒に含まれる香り成分のサンプルを用いて日本酒の特徴的な香りを学んだのち、自ら仕込んだ日本酒と対照となる2種の日本酒の合計3種の日本酒を評価し、分析値との比較も行いました。
実習を終えた学生からは、「同一条件で行った実験にもかかわらず分析値に差があることから、実習を通じて、日本酒造りの難しさを実感することができた」との感想が聞かれました。

2025年6月20日（金）、京都大学名誉教授の上村匡先生をお迎えし、令和7年度第1回日本酒学セミナー「栄養発生生物学 (Nutri-developmental biology)：成長期の栄養履歴が個体成長と寿命に与える影響とメカニズム」を開催しました。
セミナーでは、モデル生物としてキイロショウジョウバエを、そのエサとして出芽酵母の変異株を用い、幼虫期に酸と分岐鎖アミノ酸を過剰に摂取させると、成虫になった後に標準的な餌で飼育しても寿命が短縮すること、さらにこの現象にはヒストンアセチル基転移酵素Gcn5の機能低下が関与していることを明らかにした、画期的な研究をご紹介いただきました。
「日本酒学セミナー」は通常、新潟大学教職員向けに定期開催しているセミナーですが、今回は外部講師をお招きした特別開催とし、ハイブリッド形式（現地開催およびオンライン配信）にて一般の皆様にも多数ご参加いただきました。

On June 20, 2025, the 1st Sakeology Seminar in FY2025, “Nutri-developmental biology: The effects and mechanisms of nutrition history during the growth stage on individual growth and lifespan” was held, featuring UEMURA Tadashi, Ph.D., Emeritus Professor at Kyoto University, as the guest lecturer.
Dr. Uemura presented groundbreaking research using the model organism Drosophila melanogaster, together with Saccharomyces cerevisiae mutants as its diets, demonstrating that excessive intake of acid and branched-chain amino acids (BCAA) during the larval stage leads to a shortened lifespan of adults even when reared on a standard diet, and that this phenomenon is associated with reduced function of the histone acetyltransferase Gcn5.
The Sakeology Seminar is typically held regularly for faculty members and staff of Niigata University, however, this time it was a special seminar featuring an external lecturer, and many of the general public also participated via a hybrid format (on-site and online).

2025年6月27日（金）、アメリカのフロリダ国際大学より学生および教員計37名が日本酒学センターを訪問され、岸保行副センター長（現センター長）および日本酒学センター協力教員の山田陽子准教授（教育学部）、ならびに岸ゼミの学生が一行をお迎えしました。

On June 27, 2025, a total of 37 students and faculty members from Florida International University in the U.S. visited the Sakeology Center. The group was welcomed by KISHI Yasuyuki, Ph.D., Vice Director (currently Director) of Sakeology Center; YAMADA Yoko, Ph.D., Associate Professor of Faculty of Education, Cooperating Faculty Member of Sakeology Center; and students from Kishi Seminar.
